Ah, breakfast. It's my favourite meal of the day. There's no better way to start your day, than with a hearty meal!
So I thought I'd share with you, some of my favourite healthy breakfasts, which could also double as a sweet after dinner treat.

French Toast
This has become one of my go-to breakfasts, as it's simple to make, looks pretty swish and tastes delicious. Oh and it's healthy!
You will need:
1 egg
A splash of skimmed milk
Coconut oil
2 slices of wholemeal bread
Fruit bread would also taste great, or even a cinnamon and raisin bagel if you're feeling fancy.
Toppings of your choice:
I love topping mine with warm blueberries, summer berries or fresh peaches.
Syrup of your choice:
I use Sweet Freedom as it's my favourite. Honey, agave or maple syrup would all taste delish too!
Method:
1. Crack the egg in to a bowl, and add a splash of milk. Whisk this together.
2. Soak each slice of your chosen bread, in to the egg mixture.
*I use a large pasta bowl to soak my bread, as I find it's easier and less messy than using a plate.
3. Add some coconut oil to a hot pan. *I have my pan on a medium heat.
4. Add one slice of bread at a time, to your pan. Cook on both sides until golden brown, and slightly crispy.
5. When both slices of the bread are cooked, top with whatever you fancy and enjoy!
Banana Pancakes
I will be honest - as much as I love pancakes, I find they can sometimes sit very heavy on my stomach. Which is why I love these banana ones. They keep me feeling satisfied, full of energy and are a lot lighter on my stomach.
I love whipping these beauties up on a lazy Sunday morning!
You will need:
1 medium sized banana
2 eggs
Coconut oil
Toppings of your choice:
Once again I always opt for my trusty Sweet Freedom, and either berries or kiwi.
But you can add whatever you like: Fresh strawberries and Nutella, maple syrup and crushed walnuts or even mini marshmallows and chocolate sauce!
Method:
1. Peel and slice your banana in to coins.
2. Pop your banana slices in to a blender, along with the eggs.
3. Blend until everything is mixed together. Your batter should be quite thick, but smooth.
4. Add the coconut oil to a hot pan. *I used a medium heat.
5. Pour your batter in to the pan, and cook as you would a regular pancake.
*These pancakes can be quite hard to flip over, be careful, so your pancakes don't fall apart!
6. Once you have cooked all of your pancakes, it's time to jazz them up with your chosen toppings, then simply serve and enjoy!
This recipe makes between 3 - 5 pancakes, depending on the size and thickness you desire.
Yoghurt Crunch
This 'recipe' is the easiest, peasiest recipe of all time.
There's no cooking, and very minimal effort required. It's pretty much chucking ingredients in to a bowl, but I'll talk you through it anyway!
You will need:
Yoghurt
Greek/Flavoured/Natural.
Fruit
Berries/Apple/Peaches/Plums/Mango/Pear.
Granola
Muesli or cereal, would both taste great too.
Method:
1. Add your yoghurt to a bowl, and then top with whatever fruit you would like.
2. Finish with a sprinkle of granola or muesli.
3. You could also top with nuts, cacao nibs, goji berries, dried fruit, cinnamon, honey or maple syrup.
I like to layer mine, so I get a delicious yoghurty, fruity crunch with every bite!
I add a dollop of yoghurt to my bowl, then top with half the fruit, half the granola and then repeat.
This layered yoghurt crunch breakfast, would look amazing and totally instagram worthy served in a sundae glass or Mason jar.
